Recipe of the Week

Need a quick recipe to whip up that you can feel good about while feeding your body and soul?  Who doesn't!  This week is:

Turkey and White Bean Chili

This is a lovely recipe for cooler weather.  This chili is protein-packed, will keep you full for a nice long time, and has a lovely deep flavor with ingredients like chili powder, cinnamon, and cocoa powder.  This chili is a favorite of my husband, and is healthier than a lot of other chili recipes, so I don't feel guilty making it and eating it for dinner all week.  Dress it up with some avocado and Greek yogurt, or nibble on it with some tortilla chips as a treat.

Salmon Coconut Curry

This recipe is tried and true in my house, and hails from Runner's World.  The link takes you to an article called "Easy, One-Pot Postrun Meals" with a number of different recipes.  The Salmon Coconut Curry is quick, healthy, and reduces stress in the body and mind.  When we make this at home, we cook a bag of red lentils and mix them in to stretch the recipe to last all week.  Don't like salmon?  Sub in chicken or tofu.  This is not at all a spicy curry, but you can certainly kick it up a notch if that strikes your fancy.
